All the sweet treats of the holidays can feel like torture for individuals who need to watch their sugar intake and other considerations of dialysis treatments. While your friends and family are enjoying cakes, cookies and eggnog, don’t dwell on what you can’t have but think about making some treats that work for your specific diet. Here is a recipe for caramel apple cupcakes that will satisfy your sweet tooth and give you something to nibble on during the holidays

Ingredients
3 Granny Smith apples, peeled, cored and diced
1/4 cup caramel flavored sugar free syrup
1 sugar free yellow cake mix
1/4 cup vegetable oil
3 eggs
1/2 cup water

Directions
Start by microwaving the diced apples for 5 to 6 minutes until they are soft. Use a potato masher to smash them into a mashed potato- like consistency and let them cool to room temperature. Add the cake mix, apples, caramel flavored syrup, eggs, oil and water to a mixing bowl. Use a mixer on low for 1 minute and switch to medium-high for 2 minutes, scraping the bowl to ensure the complete integration of all the ingredients into the batter. Fill cupcake liners 2/3rds full of batter and bake at 325 degrees for 20 to 30 minutes. To check if finishedstick a toothpick in the center. If the toothpick comes out clean, the cupcakes are fully baked. Let them cool and begin to make the frosting.

Frosting
8 oz of sugar free vanilla frosting – you can buy this pre-prepared at the grocery store
3 1/2 tablespoons of the sugar free caramel syrup
4 1/2 oz of your favorite jelly beans

Beat frosting with caramel syrup to add the flavoring until it is fully incorporated.  Frost the cupcakes and use the jelly beans for decoration. This recipe will make two dozen cupcakes.
