The holidays can be especially challenging for those dealing with dietary requirements that are different from their friends and family. When you’re preparing for your holiday meal, what kinds of foods are you interested in eating? Here is a delightful late fall treat that will be perfect as we head into Thanksgiving and then into the winter holidays. Try this delicious pumpkin maple custard.
Ingredients
1 and one half cups soy milk
1 cup canned pumpkin puree (not pumpkin pie filling)
3 egg yolks
1 third cup of sugar
3 quarters teaspoon pumpkin pie spice
1 teaspoon of maple syrup
Directions
Heat the soy milk in the microwave to just a simmer. You should see tiny bubbles around the edge of the bowl. Mix the egg yolks and sugar. Mix the soy milk, pumpkin puree, and pie spice and add it to the egg and sugar mixture. Lightly oil several soufflé cups and pour in the mixture. Fill them only about a half to two thirds full.
Place the soufflé cups in a baking dish and pour hot water into the baking pan until the water reaches about half way up the sides of the soufflé cups. Bake at 325 degrees for 60 to 70 minutes. . Once properly baked, the custard should be firm when you gently wiggle the soufflé cups. Cool the custard cups completely. Warm the maple syrup lightly in the microwave or on the stove, and drizzle over the top before serving.
This sweet and savory desert dish will be an excellent addition to any holiday meal or just to enjoy with family and friends.
